PORTLAND, Ore. (KOIN) – On AM Extra's Takeout Tuesday, we are rethinking what we eat with a one-of-a-kind Portland culinary experience. The local nonprofit Urban Gleaners is marking their third year of the Summer Supper, a walk-around tasting experience putting upcycled ingredients in the spotlight, while raising awareness and support over food waste. It's happening Sunday, September 13, from 5 p.m. – 8 p.m. at The Redd on Salmon. Haris Kuljancic, executive director of Urban Gleaners, and Mika Paredes, executive chef at L'echelle and co-founder of Cornet Custard, joined us in the studio to share the important message behind this foodie event and to show us a delicious dish being served at the event.
