Bacon will be 'super crispy' with no washing up, according to the top chef at one of the UK's most iconic restaurants. Matt Brown is the global executive chef at Hawksmoor, the renowned steak restaurant with several branches in London, as well as in Edinburgh, Liverpool and Manchester.
Matt said you do not need an oven, grill or pan to get crispy bacon because you can achieve the same results with less time and less mess.
"When it comes to bacon, this is my little hack that I do at home," said Matt in a video posted to TikTok by Hawksmoor. Stressing that it only works with streaky bacon, Matt said: "I'm going to cook it in a microwave so it's super crispy."
This is Matt Brown's guide to getting "super crispy" bacon in two minutes using a microwave: Get a plate and lay two or three sheets of paper towel on it.
Lay the rashers of streaky bacon on top of the paper towels - make sure the rashers are not touching each other or they will stick together.
Place in the microwave on full power for around two minutes - Matt says "two minutes is your guideline, might be a little bit longer, might be a little bit less, so after about a minute-and-a-half open the door and have a look".
Although it might sound shocking that you can get crispy bacon in a microwave in almost no time at all, completely banishing the need for a greasy frying pan or oven tray, as well as a grease-splattered stove, Matt is not the only expert providing this advice.
Good Food says using the microwave is "best for those who prefer their bacon to be on the crisper side". It explains: "When microwaved, bacon cooks evenly and releases its excess fat, which can be easily absorbed by kitchen paper - this means it's less fatty than when pan-fried."
Emma Christensen on The Kitchn said: "You guys, this really works, and it's perfect for when you just want a few quick slices of bacon without the fuss of pulling out a pan. I tested this method for cooking bacon with thick-cut and regular bacon, with just a few slices and with several layers of bacon, and with different amounts of paper towels. The results were universally - and somewhat surprisingly - good! The bacon became crispy in just a few minutes while also being entirely hands off and about as mess-free as bacon can be."
Hawksmoor is famous for the quality of its beef and says it "visits family-run farms across the country to find the best pasture-reared beef". Its menus serve chateaubriand, prime rib, portherhouse and T-bone. It sells a 450g ribeye steak for £59 on its menus, which you can get accompanied by beef dripping chips as well as sauces like anchovy hollandaise, bearnaise or bone marrow gravy. Its starters include potted beef and bacon and charcoal-roasted salmon.
The restaurant said on TikTok: "Let's just make one thing clear. We don't cook bacon in the microwave at Hawksmoor. Not because we're snobby about it - we just want to the smokiness of charcoal cooking. At home, Matt has places to be and frying pans he'd rather not wash. And hey, crispy is crispy!"
