Las Vegas-based sandwich shop reopening 2 locations in Colorado Springs

Those who've been missing a taste of Capriotti's Sandwich Shop in Colorado Springs can soon get their fix again. Several months after three locations of the Las Vegas-based fast-casual sandwich chain closed across the city, two of them are preparing to reopen over the coming weeks. The Capriotti's at 5856 Barnes Road is reopening Sept. 15. Another location at 140 E. Cheyenne Road, Suite 110, at the Creekwalk retail center, is scheduled to reopen in October, company spokesperson Maria Pereda said by email. A third location that previously operated at InterQuest Parkway will remain closed. '… The brand chose to focus its current revitalization efforts and resources on strategically repositioning the Barnes Road and Cheyenne Road spaces to best serve the broader Colorado Springs community,' Pereda said. All three locations, previously owned and operated by a husband-and-wife franchise team, closed suddenly in the spring. A Capriotti's Sandwich Shop location at 140 E. (Breeanna Jent, The Gazette) The Capriotti's on Barnes and Cheyenne roads are now operating under new corporate ownership rather than traditional franchising. 'Colorado Springs has always been a fiercely loyal market with fans who deeply appreciate our quality and hand-pulled, slow-roasted turkey. Maintaining a presence here was a priority to honor that strong community connection and ensure local fans get the top-tier experience they deserve under direct corporate management.' Capriotti's Sandwich Shop was founded in Wilmington, Del., in 1976. It specializes in cold or grilled submarine sandwiches and also offers made-to-order salads, soups and sides. Each restaurant roasts whole turkeys nightly, hand-pulls its meats and hand-makes its own coleslaw and meatballs each day. The revamped 1,433-square-foot Barnes location will offer fan favorites such as Capriotti's award-winning 'The Bobbie,' a Thanksgiving-style sandwich made with slow-roasted turkey, stuffing made in house, cranberry sauce and mayonnaise; its classic cheesesteak, which has earned a place in the Cheesesteak Hall of Fame; and premium items like Snake River Farms American wagyu beef subs, Pereda said. Dine-in, pickup, delivery and catering options are also available. Additionally, the Cheyenne Road location is adding fries to its menu. Pereda said Capriotti's is focusing on reopening the two Springs restaurants with no immediate plans to expand elsewhere in the city, but 'leadership is always evaluating future opportunities to grow as the brand revitalizes the market.' Capriotti's has 157 restaurants across more than 20 states, according to a map of locations on its website.
